Richard and I want to wish all Moms and Step Moms everywhere a happy and safe Mother's Day!

If you are in need of a fast and simple, yet elegant Mother's Day treat - look no further. Charred Oaks Inn's Chocolate Pots de Creme (pronounced poh-de-crem) are delicious, rich and sophisticated yet amazingly simple to make. This version requires no baking so you can serve them in your choice of parfait glasses, demitasse cups, shot glasses, dessert wine glasses, tea cups (our favorite), espresso cups or mini ramekins.


1/3 cup bittersweet chocolate chips (2 oz) (We prefer Ghiradelli)

2 TBS granulated sugar

1/8 tsp salt

1/2 tsp pure vanilla extract

1/2 cup heavy whipped cream

Sweetened whipped cream, if desired

Chocolate shavings, if desired (We prefer Ghiradelli)


Place chocolate chips, granulated sugar, sugar and pure vanilla extract in blender.

In small microwaveable, microwave whipping cream uncovered on HIGH, in 20-second increments or until cream begins to boil. Pour hot cream into blender; cover and blend until smooth.

Pour chocolate mixture into dessert cups, bowls, ramekins, etc, Cover and refrigerate at least 2 hours until set and cold. Garnish with sweetened whipped cream and chocolate curls.
