Okay chocolate cake lovers raise your hands!!! If you're looking for a special dessert for Valentine's Day, an anniversary or a birthday party, this is the cake! This fudgy Bundt cake uses boxed mixes, both cake and pudding; and semi-sweet chocolate chips - hence the triple chocolate effect. I also add sour cream which helps to make it a very moist cake. And to top it off, I go for the grand slam and drizzle ganache all over it. I have heard the word insane when describing a forkful.
1 box Double Chocolate/Fudge cake mix
1 box instant chocolate/fudge pudding mix
1 cup sour cream
½ cup canola or vegetable oil
½ cup warm water
1 10 - 12-ounce bag semisweet chocolate chips
Ganache -Cook 8 ounces good semi-sweet chocolate chips, 1/2 cup heavy cream and 1 teaspoon instant coffee granules in heat proof bowl over simmering water until smooth and warm, stirring occasionally.
Butter/grease a Bundt pan and preheat oven to 350º
In bowl of stand mixer, put all ingredients except the chocolate chips. Mix until well combined and smooth. Add chocolate chips and mix gently to just combine.
Pour batter into prepared pan and bake for about 45 minutes until done. Cool on wire rack for 15 minutes and then invert on serving plate and drizzle ganache while still warm.
