Traditional Victorian Sponge in honor of her Majesty's birthday!

The Victoria Sponge is considered a 'simple cake' these days made by using a mix of sugar, butter, eggs and flour, sometimes with the addition of baking powder. The classic filling has come to be based around jam and cream or buttercream. The cake is then finished with a dusting of icing or powdered sugar. The first reference to this beloved favorite in England dates all the way back to 1615.

At Charred Oaks Inn we love to celebrate our guests' birthdays. With a little warning, we will bake a cake for the birthday star to share with fellow guests. The birthday treats have ranged from dark chocolate biscuit cakes to carrot cakes with creamy mascarpone frosting and Victorian Sponges stuffed with strawberry jam and buttercream to sparkling Rose cupcakes.
