Pictured is a traditional Irish cake/loaf often called a Tea Brack because of the soaking of the raisins and currents in strong tea overnight. Irish tea is always recommended, but I prefer English Breakfast. Here in Kentucky Bourbon Country, one can also soak the fruit in one's favorite bourbon (I have used Evan Williams, Makers Mark, Old Taylor, Woodford Reserve and Four Roses to name a few). The original Brack had only Barm (a mixture of hops; malt), milk and flour and was made for special occasions like New Year's, Halloween, Easter, etc. It is between a tea bread and a loaf in texture.
